Since next week is Valentines day, I thought I would bake my gaming group some delicious cupcakes. I love baking and the other day I found some really nice strawberries, so voila! Strawberry Heart Cakes. (No dragons were harmed in the making of these cupcakes. Only afterwards WHEN WE KICKED ITS BUTT!!!)
To make these strawberry filled delights I used a box of Betty Crocker Strawberry Cake Mix, a box of strawberries, and some icing. I also have a silicone muffin pan that is shaped like little hearts. You can buy one of these on Amazon for cheap.
So the recipe is easy enough: Mix up the cake mix according to the instructions on the box and using a muffin pan lined paper cups, bake your cuppity cakes to delicious perfection. While they are baking, make the compote.
Ingredients for filling:
• 1 cup of fresh strawberries, finely chopped, divided
• 3/4 cup sugar
• 1/4 cup cold water
• 2 Tbsp. corn starch
• Pinch of salt
• 2 tsp. butter
In a small sauce pan, combine the sugar, cold water, corn starch, salt, and cup of strawberries. Turn heat to medium-high and bring to a boil. Reduce heat and simmer for 8-10 minutes, until filling thickens. Remove from heat and stir in butter. You’ll need to cool the filling so I put it into a container and threw it in the fridge for a few minutes.
Then toss the strawberry compote into a pastry bag and squirt a bit into each cupcake. Ice each cupcake with your favorite icing. You can decorate the cakes with a little bit of compote and cut strawberry to make them look extra sexy. I’d really love to figure out how to make a mold of a d20 and then make strawberry Jello d20’s to top cupcakes.
The cupcakes were a hit; Crit Delicious! The only trouble is the box mix makes 24. I have a whole dozen of them still in my fridge. Anyone want a cupcake?
